The Five Dot Ranch butcher shop was established in 2008 and showcases our fresh and dry-aged premium quality beef product for consumers to view and purchase directly from the meat case. Our butchers ensure that the case is full of our highest quality product and provide direct assistance with any questions, concerns, or requests. The meat case has a complete fresh and dry aged line-up of steaks, fresh ground beef, and more that customers can purchase. We also have a grab n’ go case that allows customers to quickly grab steaks that are pre-marinated and packaged for a fast and easy trip to the market.
Personalized Dry Aging Program
The Five Dot Ranch Butcher Shop is now offering a personalized dry aging program! With this arrangement customers are able to personally select the specific beef muscle they want, how long they’d prefer it to be aged (28-100+ days) and how they would like it cut once the aging process is complete. A $100 deposit will be required at the start of the program and the remaining balance will be due at the time of pickup.
The entire dry aging process will take place in our Butcher Shop at the Oxbow Public Market in Napa, California. If interested please give us a call at our store or personally stop by and we will be happy to get you started in the program!
Here are a few of our recommendations to help get you started:
The Striploin muscle will reach its maximum amount of age flavor in a shorter amount of time, so the recommended time for aging is between 21-60 days. The Ribeye muscle gets great flavor at 35 days but will reach its optimal maturity closer to 60 days of aging. The Shortloin muscle can be aged the longest, starting at 35 days and can reach its full flavor potential and texture at 100+ days of aging.
